Roll is one of the most popular and favorite dishes in Japanese cuisine. It is interesting that this dish is not of Japanese origin, as it is commonly believed, it is of USA origin. In the 70-ies of the last century, Japanese cuisine began to conquer the foodies of all countries, so restaurants and sushi bars began to open everywhere. However, in America this dish was not in a great demand. Then Japanese chefs dodged and decided to wrap various fillings in a sheet of nori seaweed. Americans liked the rolls and they soon became popular even beyond USA. Currently there are various recipes with the use of traditional ingredients and without them. Even if you don't eat fish and seafood, it is not the reason of giving up your favorite dishes! Today we are going to make rolls suitable for both raw and vegan diets. Are you ready to roll?
You will need:
Grate the unpeeled zucchini on a slicer and then squeeze the pulp with your hands to get rid of excess fluid. Chop finely the grated zucchini on a chopping board similar to the consistency of rice. This is the most important stage, because the thin wedges of grated zucchini need to turn into a small rice grains. Season this mass with salt , drizzle with lemon juice, stir and leave it for some time to make the zucchini give the juice.
Take a strainer and the gauze. Put the zucchini rice in a gauze and leave this mass in the strainer for the time of cooking the filling.
Wash and cut into shreds the vegetables for the filling. We use bell pepper, cucumber, carrot, avocado and cherry tomatoes. You can choose any vegetables to your taste as a filling.
Preparation of sauce-topping: wash the mushrooms and cut them into small pieces. Grind the seeds in a coffee grinder. Then put all the ingredients: mushrooms, sunflower seeds, chopped dill, a small amount of live water and sea salt, place them in blender and grind until smooth.
Wrap the bamboo mat (Makis) with a food wrap.
You need to squeeze gently the zucchini pulp through the gauze. Then put it in a deep bowl and add some pine nut flour to taste . It will make the rice more sticky. Mix it up and spread in a thin layer on a food wrap.
Put a sheet of nori on top (rough side up). Then put the filling onto it:the mushroom sause, then the chopped vegetables - cucumber, bell pepper, avocado and other. Sprinkled it with the pumpkin seeds and watercress.
Moisten slightly a nori sheet with a live water, start to roll it gently holding the loaf with your fingers.
Cut the loaf with a sharp knife into equal parts. Put your rolls on a plate and garnish with greens..
By the way, if you don't want to use rice, you can remove it and still have a tasty dish.
